Approx. 90 pounds of vacuum-sealed, labeled beef — packaged just like our retail cuts.
Just over half of the weight is ground beef, packed in convenient 1 lb flat packs.
Each quarter cow includes a variety of premium cuts such as filet steak, ribeye steak, top sirloin steak, New York strip steak, chuck roasts, sirloin tip roasts, a half brisket, chuck eye steak, cube steak, and beef tips.
Other cuts that may be included are flat iron, osso buco, boneless short ribs, rump roast, Denver steak, flank, skirt, bistro, and others — depending on how the animal divides. (Cows don’t divide evenly into quarters, but we make sure every box has a great mix.)
At this price, quarter cows are not customizable, but you’re welcome to message us for a quote if you’d like specific cuts.
